All whiskeys of Kattilalaakson Tislaamo are made from domestic heritage grains. Old grain varieties have longer stalks and smaller kernels than modern varieties. Long-stalked grains have deeper roots, allowing the plant to better utilise soil nutrients and withstand drought. In small kernels, the surface layer proportion is larger, resulting in more flavour and nutrients and less starch. This is why heritage grains taste better, but yields and mashing returns are lower. By using heritage grains, we support the fearless farmers who have set out to revive the cultivation of old grain varieties despite smaller harvests.
